Taco Cheese Dip

Ingredients

  • 1 - 1 1/2 lbs ground beef, cooked, crumbled and drained
  • 1 packet taco seasoning
  • 32 oz Velveeta cheese, cubed
  • 2 cups Monterey Colby Jack cheese, shredded
  • 2 cans Ro-tel, do not drain
  • jalapeno slices, diced onion---as garnishes, if desired
  • assorted tortilla chips, celery sticks...for serving

Instructions

  1. Once ground beef is cooked, crumbled and drained, keep over low to medium heat and add the packet of taco seasoning. Stir well to blend in and let cook 3-4 minutes.

  2. Place disposable Crockpot liner in the Crockpot, if using. If no liner is available, spray Crockpot with cooking spray.

  3. Add ground beef mixture to the Crockpot.

  4. Add remaining ingredients to the Crockpot and cook on HIGH 2 hours or on LOW 3-4 hours. Switch setting to WARM while serving.

Recipe Notes

NOTE:  Check Crockpot occasionally and stir.  If mixture seems too dry, add more Ro-Tel or 1/2 cup hot water or milk.
