Cut off a thin layer across top of each apple. Use a small spoon or small ice cream scooper to remove core and seeds from each apple.
Spray the bottom of the CrockPot with cooking spray; set apples into CrockPot.
Evenly distribute chopped pecans to apples, and pack into apples. Then, add 1 T. brown sugar into apple cavity over pecans and across top of apple. Sprinkle tops with cinnamon-sugar mixture...repeat for each apple.
Evenly distribute melted butter over tops of apples...adding more if needed.
Place lid on CrockPot and cook on HIGH for 2-3 hours, or until apples are just tender, but not soggy or falling apart.
