Roasted Potatoes

Ingredients

  • 2 - 2 1/2 lbs red potatoes, washed and cubed (about half a bag)
  • olive oil
  • 1 T. dried minced onion flakes
  • 1 T. dried rosemary
  • 1 t. dried thyme
  • 1 t. dried oregano
  • freshly ground black pepper, to taste

Instructions

  1. Spray CrockPot with cooking spray.

  2. Add cubed potatoes to CrockPot; drizzle lightly with olive oil and gently toss.

  3. Sprinkle seasonings evenly over potatoes, gently toss to distribute.

  4. Place lid on CrockPot and cook on HIGH for 3-4 hours.

  5. Serve immediately.

Recipe Notes

For an added touch, sprinkle freshly grated Parmesan over potatoes before serving!
