Meatloaf

Ingredients

  • 2 lbs. 80% lean ground chuck
  • 14.5 oz can fire-roasted tomatoes
  • 1 cup dry breadcrumbs
  • 1 oz packet onion soup mix
  • 2 eggs, lightly beaten
  • 1/4 cup ketchup, plus more for topping if desired
  • 1/4 cup mild cheddar cheese, finely diced (I use kitchen sheers)
  • 1/2 t. Worcestershire sauce
  • dash garlic powder
  • dash black pepper

Instructions

  1. In a large mixing bowl, combine all ingredients until ingredients are thoroughly mixed, but do not over mix/handle.

  2. Spray CrockPot with cooking spray.

  3. Add meat mixture to CrockPot and shape into a loaf.

  4. If desired, drizzle additional ketchup lightly over top.

  5. Place lid on CrockPot and cook on LOW 5-6 hours until done. Remove and discard fat/grease with spoon, ladle or turkey baster.

  6. Carefully slice and serve!

This is now my favorite meatloaf and the leftovers are wonderful!  Enjoy!
