Lucy's Pound Cake

A simple, delicious cake

Ingredients

  • 1/2 cup Crisco shortening
  • 2 sticks margarine or butter
  • 3 cups sugar
  • 6 eggs
  • 1 tsp. lemon flavoring
  • 3 cups all-purpose flour sifted twice before measuring
  • 1 tsp. baking powder
  • 1 cup dairy milk
  • 1 tsp. vanilla

Instructions

  1. Preheat oven to 325 degrees. Grease and flour a large tube pan.

  2. Have all ingredients at room temperature.

  3. Cream together Crisco, margarine/butter (we use butter) and sugar.

  4. Add eggs, two at a time, and mix well.

  5. Stir baking powder into flour; add alternately with milk.

  6. Add flavorings and stir well to combine.

  7. Bake at 325 degrees for 1 1/2 hours or until cake tests "done".

Recipe Notes

This is a wonderful cake served by itself, or with a glaze made of powdered sugar and lemon juice.  Great to bake in small loaf pans, too, and give as gifts.  Enjoy!
