Tomato Pie
Ingredients
- 1 pie shell, frozen
- 1 cup shredded Mozzarella cheese
- 1-2 T. chopped basil, fresh or dried
- 3-4 tomatoes, sliced
- 1/2 sweet onion, sliced
- 1/2 large bell pepper, sliced
- olive oil
- salt and pepper
Instructions

Preheat oven to 400 degrees.

While oven preheats, saute onion and pepper slices in small amount of olive oil for 3-4 minutes…just to soften.

Bake pie shell for 5 minutes, then remove from oven and pierce around bottom and edges with a fork to keep shell from puffing up. Sprinkle 1/2 cup of Mozzarella cheese over pie shell and return to oven to melt.

After cheese has melted, remove pie from oven and layer the sliced tomatoes evenly around the bottom of shell. Then sprinkle the chopped basil evenly over top. Salt and pepper to taste.

Add the lightly sauteed onion and pepper slices and return pie to oven to bake for 10 minutes.

After 10 minutes, scatter the remaining 1/2 cup of cheese over top of pie and bake for an additional 12-15 minutes, or until cheese is melted and just begins to lightly brown. Be careful not to burn edges of pie crust, cover with foil if crust browns too quickly.

Remove pie from oven and allow to "rest" for 10-15 minutes before slicing. Serve warm or at room temperature. Store leftovers in refrigerator.
