March 10th is National Pack Your Lunch Day…and I thought this would be a simple, quick recipe for you to try.
Spaghetti Salad
Ingredients
- 1 box spaghetti or angel hair pasta
- 1 green bell pepper
- 1-2 cucumbers
- 1/2 red onion
- 1 pkg cherry tomatoes
- 1 envelope dry Italian dressing mix
- 1 bottle Italian dressing
- 1/2 cup grated Parmesan cheese, optional
Instructions

Prepare your choice of spaghetti or angel pasta according to package directions.

While pasta is cooking, finely chop all veggies, the amounts used are totally up to your preference, and feel free to add or subtract veggies according to your liking.

Place chopped veggies in a large mixing bowl; sprinkle the package of dry Italian dressing mix over the veggies and stir well. Set aside to marinate.

When pasta is done, drain well and add to the large mixing bowl containing the chopped veggies. Stir well and add 1/2 to 3/4 bottle of Italian dressing. Serve immediately if you like warm pasta salad. Or, cover and store in refrigerator until ready to serve. Add additional Italian dressing at time of serving, if needed. Garnish with grated Parmesan cheese, if desired.
Recipe Notes
This is a great dish to serve especially in the Spring and Summer seasons. It goes wonderfully with grilled chicken, burgers, etc…and is always a hit at covered dish gatherings! To make a meal out of it, top with sliced grilled chicken or shrimp and enjoy! You may easily adjust the amounts of ingredients based on number of servings needed.

Made this salad today!! Family approves, so this will be made more often. Will be great for cookouts or any gathering. Followed this recipe, and added salami, feta cheese, and kalamata olives.
