The time for Season’s Greetings—and Eatings—is upon us! Here is a SIMPLE and Quick reminder to plan ahead to stay on track with a balanced meal, or maybe you need a SIMPLE plan for eating healthier. I wanted to take a few moments to share with you the SIMPLE, easy way I keep healthy snacks and quick salads on the ready!
On Sunday evenings, or the beginning of each week, I cut fresh veggies and place in my Rubbermaid Brilliance containers. They are the BEST containers I have found for sealing airtight and extending the freshness of food items. You can sometimes find them at WalMart or TJ Maxx, but I usually just order from Amazon. The small size shown in front here are the 1.3 cup. The eggs, carrots and broccoli are shown in the 3.2 cup containers.
We like a variety of choices for assembling quick lunchtime or dinner side salads. By chopping, slicing, dicing all the fresh ingredients at one time and placing in the containers, we are more likely to eat fresh foods and a good variety. When I am hungry, the last thing I want to do is have to stop and clean, slice and chop salad items, I would usually turn to a bag of chips out of convenience!
Once I have my containers loaded, I place the airtight lids on and then stack on an ordinary baking sheet and side into the frig. The baking sheet makes it easy to pull all containers out to quickly assemble a salad without having to make multiple trips back and forth from the frig. QUICK TIP: assemble empty containers (with lids on) and place on a baking sheet or tray, then position in your frig for best use of space. You may need to raise or lower a shelf, but this SIMPLE system does not take up much room…and will help you to use up those fresh veggies before they go bad!
