March 4th is National Pound Cake Day!
I want to share with you our family’s favorite Pound Cake recipe. This recipe was given to our family by my Grandmother Story’s dear friend, Lucy Swanson. Lucy, and her husband Carl, lived beside my grandparents. Every Saturday, Lucy would bake this pound cake for Carl. He liked to eat a piece as soon as it came out of the oven…served up with a cold glass of milk. Lucy and Carl worked in the local hosiery mill and packed this treat in their lunch boxes every day. They were wonderful Christian people who worked hard and served the Lord. Carl was the choir director at my home church for many years. He passed away when I was a toddler, so I did not have the pleasure of knowing him…but I will always remember sweet Lucy and her work in our church.

Lucy’s Pound Cake
A simple, delicious cake
Ingredients
- 1/2 cup Crisco shortening
- 2 sticks margarine or butter
- 3 cups sugar
- 6 eggs
- 1 tsp. lemon flavoring
- 3 cups all-purpose flour sifted twice before measuring
- 1 tsp. baking powder
- 1 cup dairy milk
- 1 tsp. vanilla
Instructions

Preheat oven to 325 degrees. Grease and flour a large tube pan.

Have all ingredients at room temperature.

Cream together Crisco, margarine/butter (we use butter) and sugar.

Add eggs, two at a time, and mix well.

Stir baking powder into flour; add alternately with milk.

Add flavorings and stir well to combine.

Bake at 325 degrees for 1 1/2 hours or until cake tests "done".
Recipe Notes
This is a wonderful cake served by itself, or with a glaze made of powdered sugar and lemon juice. Great to bake in small loaf pans, too, and give as gifts. Enjoy!
