Day 2 of our CrockTober Celebration (it is a Celebration, since it involves FOOD! haha) brings a Simple Chicken dish
As you can tell, I forgot to take a picture of the finished dish….but, it smelled sooooo good, we dove right in and started eating before I remembered to get a pic.
Honey Garlic Chicken
Ingredients
- 6-8 boneless, skinless Chicken thighs
- 1/2 Vidalia, or sweet onion, sliced
- 1 cup honey
- 1/2 cup ketchup
- 1/2 cup soy sauce, I use low-sodium
- 1 T. minced garlic
- dash freshly ground black pepper
- 1 T. cold water
- 1 T. cornstarch
Instructions

Spray CrockPot with cooking spray, or use a liner for easy clean-up.

Rinse Chicken thighs and remove excess skin; place in CrockPot. Cover thighs with sliced onion pieces

In a large mixing bowl, combine honey, ketchup, soy sauce and minced garlic; stir well.

Pour sauce over chicken and onions; sprinkle pepper over top if desired.

Place lid on CrockPot and cook on LOW 6-8 hours or HIGH 4-6 hours, until thighs test done.

To thicken the sauce, combine water and cornstarch and add to CrockPot at end of cooking time. Stir well and cook on HIGH for 15 minutes. Stir and serve.
