Even people who claim to not like Meatloaf, love this version…cheese is the secret ingredient 🙂
Meatloaf
Ingredients
- 2 lbs. 80% lean ground chuck
- 14.5 oz can fire-roasted tomatoes
- 1 cup dry breadcrumbs
- 1 oz packet onion soup mix
- 2 eggs, lightly beaten
- 1/4 cup ketchup, plus more for topping if desired
- 1/4 cup mild cheddar cheese, finely diced (I use kitchen sheers)
- 1/2 t. Worcestershire sauce
- dash garlic powder
- dash black pepper
Instructions

In a large mixing bowl, combine all ingredients until ingredients are thoroughly mixed, but do not over mix/handle.

Spray CrockPot with cooking spray.

Add meat mixture to CrockPot and shape into a loaf.

If desired, drizzle additional ketchup lightly over top.

Place lid on CrockPot and cook on LOW 5-6 hours until done. Remove and discard fat/grease with spoon, ladle or turkey baster.

Carefully slice and serve!
