EDIT: for some reason this did not post on Day 9, so here you go...
Day 9 and we have a SIMPLE, but hearty quiche to serve during the Holidays, when hosting Weekend Guests, or even as a change-up to a routine Weekday Dinner!….
Meat Lover’s Quiche
Ingredients
- 18 eggs, lightly beaten
- 10-12 slices bacon, cooked and crumbled
- 1 lb. sausage, cooked and crumbled
- 8 oz Black Forest Deli Ham, diced
- 1/4 cup finely diced sweet onion, optional
- 3/4 cup dairy milk
- 1 1/2 cups Colby Jack cheese, shredded
- dash of salt and pepper, optional
Instructions
-
Whisk eggs with dairy milk in a large bowl until blended; season with salt and pepper if desired.
-
Spray CrockPot with cooking spray and add crumbled bacon, sausage and ham to CrockPot; stir to combine.
-
Sprinkle diced onion over meats; then top with 1 cup of Colby Jack cheese.
-
Pour the egg/milk mixture over top of cheese; gently stir to allow all ingredients to be covered with the egg mixture. You may add more milk if needed.
-
Place lid on CrockPot and cook on HIGH for 2 – 2 1/2 hours, or until middle of quiche is "set" and no longer runny. Add remaining 1/2 cup cheese over top and replace lid and let cook for a few minutes to melt.
Recipe Notes
This is a great one-pot meal for breakfast, brunch or dinner. Add in diced peppers, etc. to change up the flavors…or use only one or two meats and increase their amounts. Total amounts may be adjusted to make a smaller quiche, if needed. Great dish to make on weekends and serve family for breakfast during a busy week as the leftovers reheat nicely. Keep this dish in mind when you want to send a meal to a friend or new neighbor. Enjoy!
