We have had a busy and eventful past week..visiting our son at college, celebrating a birthday and a surgery! Thanks for those who have missed me and the recipes! Today, I am re-sharing one of my hubby’s favorite dips…and maybe I need to make it for him as he recoups for his knee surgery.

OCT 16: Today is a BIG Day at the Simple Season…It’s “Mr. Simple’s” Birthday! In honor of my hubby, I am sharing one of his favorite treats….
Classic Reuben Dip
Ingredients
- 3 cups shredded, cooked corned beef
- 2 cups sauerkraut, well drained
- 8 oz package cream cheese, cut up
- 2 cups shredded Swiss cheese
- 1/2 cup sour cream
- 1 cup Thousand Island dressing
- crackers, rye party bread slices, etc, for serving
Instructions

Spray Crockpot with cooking spray or use a liner for easy clean up on this dish!

Add all ingredients to your Crockpot (a large oval-shaped is best for even heating).

Place lid on Crockpot and cook on LOW for 3-4 hours, until ingredients are well combined. Stir occasionally while dip is cooking.

Serve with crackers, rye party bread slices, etc.
Recipe Notes
Leftovers of this dish are great when slightly heated in the microwave and served on toasted French bread!
