Day 10 and it’s The Weekend! Time for a YUMMY Treat! Here is a SIMPLE and easy dip, even the kids can make! Great recipe to keep on hand for tailgating, gatherings…or even to enjoy on Halloween while you entertain trick-or-treaters!

It’s always a great idea to use liners in your Crockpot when making a cheese-based dip! This dip would also be great to serve on baked potatoes!

Taco Cheese Dip
Ingredients
- 1 – 1 1/2 lbs ground beef, cooked, crumbled and drained
- 1 packet taco seasoning
- 32 oz Velveeta cheese, cubed
- 2 cups Monterey Colby Jack cheese, shredded
- 2 cans Ro-tel, do not drain
- jalapeno slices, diced onion—as garnishes, if desired
- assorted tortilla chips, celery sticks…for serving
Instructions
-
Once ground beef is cooked, crumbled and drained, keep over low to medium heat and add the packet of taco seasoning. Stir well to blend in and let cook 3-4 minutes.
-
Place disposable Crockpot liner in the Crockpot, if using. If no liner is available, spray Crockpot with cooking spray.
-
Add ground beef mixture to the Crockpot.
-
Add remaining ingredients to the Crockpot and cook on HIGH 2 hours or on LOW 3-4 hours. Switch setting to WARM while serving.
Recipe Notes
NOTE: Check Crockpot occasionally and stir. If mixture seems too dry, add more Ro-Tel or 1/2 cup hot water or milk.
